GOOD FRANCE – GOÛT DE FRANCE
1000 chefs, 1000 menus on 5 continents

“Speaking of cuisine – French cuisine, it’s speaking of joy of living, lightness, optimism and pleasure”.
Alain Ducasse

The concept
Taste of France / Good France will gather, on the eve of spring, on 19 March 2015, more than 1,300 chefs across 5 continents to celebrate French gastronomy. In every participating restaurant, in the form of a dinner, the event will pay tribute to the excellence of French cuisine, its capacity for innovation and the values it represents: sharing, fun, respect for “eating well”, its contemporaries and the planet.

An international selection commitee

The restaurants around the world, from top gastronomy to quality bistro, appear on the site www.goodfrance.com, from 4 November 2014, offering a menu valuing the French gastronomy: a cuisine made of fresh, seasonal and local products.

An international selection committee of chefs, chaired by Alain Ducasse, has validated the list of participating chefs, assessing the coherence and quality of the menus offered by the restaurants registered in their respective geographical areas.
The specifications communicated to the chefs, have to consider:

to create a menu in the spirit of the repas gastronomique [gastronomic meal] of the French with a sequencing of dishes:

A traditional French aperitif: Champagne and cheese puffs (filled or not) or ice brandy and foie gras

A cold starter and a hot starter

– A fish or shellfish and a meat or poultry

A selection or a French cheese

French wines and a French digestiv

To follow a guideline: each menu must represent a cuisine using less fat, sugar and salt, cautious of “eating well” and environment, and using vegetables.

In Goa, only 1 restaurant has been selected!
